Monday Meals: Stuffed Shells

Hey everyone! How was your weekend? Get a lot done? I was a busy bee doing projects and cooking!  Today I am going to share with you a recipe that my family has been making for forever.  There are many different versions of these recipes on Pinterest, but here's mine!

Ingredients:
-Baby Spinach
-Minced Garlic
-1 Box Jumbo Shells
-16 oz. Ricotta Cheese
-Mozzarella Cheese
-1 Jar of Spaghetti Sauce
-1 egg
-13 x 9 in. pan

Step 1:
-Preheat your oven to 350 degrees Fahrenheit
-Cook shells by following directions on the box
-Pour just a little spaghetti sauce on the bottom of pan (this will keep the shells from sticking to it once they are done cooking)

Step 2:
-The shells will take awhile to cook, so while they are doing that, I saute the spinach and garlic in some olive oil




Step 3:
-In a bowl, combine the egg, ricotta cheese, and a handful of mozzarella cheese

Step 4:
-Once the spinach and garlic are sauteed, let them cool for just a minute or so before you add them to the cheese mixture. (you don't want them to cook the egg)




Step 5:
-Start stuffing!! I use a small spoonful of the mixture for each shell, use your judgement for this one




Step 6:
-Once you have filled the pan with the shells (you may not use all of the shells), pour the rest of the spaghetti sauce over them.  Be sure to cover all of the shells, don't leave any shell exposed, it will cook and turn hard.
-Cover with mozzarella cheese to your liking




Step 7:
-Cook for 35 mins

Step 8:
-Eat up!!!
