Monday Meals: 40 Clove Garlic Soup and Homemade Croutons
Well, I'm not going to lie, this recipe is NOT for people who don't like garlic. I am a garlic lover. I put garlic in everything that I possibly can, luckily it's good for you!! This soup is so amazing and garlic-y, it just stole my heart!
*Disclaimer: Make sure you have gum ready after eating, your breath will smell like garlic! ;)*
I found this recipe on Pinterest, you can find the original recipe HERE. As I have said before, I'm a really picky eater, so I tailored the recipe a little bit and just left a few things out mainly because we didn't have any at the moment. This recipe also is not a recipe I could make during the week for dinner. It has a lot of prep work, and after preparing taxes all day, the last thing I want to do is more preparing. So let's dive in, shall we?
-4 heads of garlic (use however many you want, this is what I did because I love garlic)
-1/2 loaf of french bread
-4 C of chicken broth (use low sodium to make it healthier)
-Red pepper flakes (to your liking, a little goes A LONG ways!)
-1/2 C of heavy cream
-White wine (optional, I didn't use because we didn't have any)
-1 onion (optional, I didn't use because we didn't have any)
Preheat oven to 350 degrees Farenheit
Take 3 heads of garlic and cut the tops off, basically, cut them in half so the tops are exposed, DO NOT PEEL THEM, leave them intact
Put them on a cookie sheet and drizzle olive oil on top of them (be sure to cover in oil so they don't burn)
Put in the oven for 30 mins
As the garlic is roasting, peel about 10 cloves of the garlic you have leftover and put to the side
Take your half loaf of bread, chop into square crouton pieces
Mix in bowl with olive oil, a sprinkle of red pepper flakes, and Italian seasoning
In a large dutch oven, pour in your chicken broth and put in your peeled garlic
Once roasted garlic is done, let it cool until you can touch it. You should be able to just squeeze the garlic-y meat into the chicken broth
Bring to a boil and let simmer with a cover for 20 mins (or until the peeled garlic is soft)
While the broth is simmering, put bread into a pan and toast until browned to your liking
Once browned, toss with a little bit of Parmesan cheese
Once the broth is done, ladle the broth and garlic into a blender or food processor
Add about 1/4 tsp of red pepper flakes
Blend until smooth
When it's smooth, pour back into dutch oven and simmer for another 15 mins
Stir and slowly add your heavy cream
Add salt and pepper to taste
Ladle soup into bowl, add some croutons, a little bit of Parmesan cheese, and spritz of lemon
You are ready to eat!
Don't know what to do with your other half of bread? Roast some more garlic and use it as a spread on top of it!! It's SO GOOD!!
